Monday’s Morsels- Itsa meatball!!

I found the recipe for these meatballs today. I was watching the Today show & made the mistake of checking my BMI….after which I began searching Weight Watchers recipes…after which I ate a cupcake….don’t judge!

These meatballs are super yummy. And they’re pretty damn healthy. Which is always good. They also only require 1 bowl to prepare them in. Always a bonus!!  I paired them with some of the Uncle Ben’s Whole Grain Brown Ready Rice. I love that stuff. And it takes 90 seconds in the micro. Jackpot!!

So, give these tasty meatballs a try! Won’tcha?!

Asian Turkey Meatballs with Sesame Dipping Sauce
recipe adapted from Skinny Taste

Makes 10 Meatballs
  • 1/4 cup panko crumbs
  • 1 lb  lean ground turkey (original recipe called for 1 1/4 lbs. Turkey which would yield 12 meatballs)
  • 1 egg
  • 1 clove garlic, minced
  • 1/4 cup chopped fresh cilantro
  • 3 scallions, chopped
  • 1 tbsp low sodium soy sauce
  • 2 tsp sesame oil
Dipping Sauce
  • 4 tbsp low sodium soy sauce
  • 2 tsp sesame oil
  • 2 tbsp fresh lime juice
  • 2 tbsp water
  • 1 chopped fresh scallion

oven to 500°F.

ground turkey, panko, egg, garlic, salt, scallions, cilantro,  soy sauce, and sesame oil and mix with your hands until combined well.
1/4 cup meat mixture into a ball and transfer to a baking dish.
with remaining mixture.
until cooked through, about 15 minutes.
For the dipping sauce:
together lime juice, water, soy sauce, and  sesame oil in a bowl.
Add scallions.
meatballs, with sauce drizzled on top, over brown rice or whole wheat noodles.

Brownies…with SNICKERS!!!!

These brownies may or may not have been my dinner last night….and my breakfast this morning…don’t judge! I clearly need better eating habits. Among MANY other things…Anyhoo, you should make these. I would say these fall into the cake like brownie category. However, they are just as rich as the fudgy brownies. So, no matter what type of brownie you prefer (unless you’re a true fat kid like me, who doesn’t discriminate and likes ALL kinds) these brownies are for you! Oh, and then there’s the whole LAYER of snickers thing!!! Yep. That’s happening.


Recipe adapted from: My Baking Addiction


4 ounces bittersweet chocolate, chopped

3/4 cup butter

1 1/2 cups granulated sugar

3 eggs (lightly beaten)

1 tsp. Vanilla

1/4 tsp. salt

1 cup A.P. flour

12 fun size Snickers-cut into fourths


Preheat oven to 350. Line a 13×9 brownie pan with foil and spray with nonstick spray.

Microwave chocolate and butter together in a large bowl on medium power (50%) for 3 minutes or until butter is melted.

Whisk until chocolate is melted. Stir in sugar. Add in eggs, extract and salt. Gradually add in flour and stir until just combined.

Spread half the batter into prepared baking pan. Add Snickers in an even layer and cover with remaining half of brownie batter. Bake for 30-32 minutes. Do not over bake!!

Remove to cooling rack and let cool COMPLETELY before cutting. Trust me on this one. If you cut the brownies too soon, they will fall apart. Resist the temptation! It’s worth it!! 🙂



Monday’s Morsels- PB Banana Chocolate Chip…Shake

Call me The King (Elvis, that is) but I love me some PB and Bananas! I also love almost anything that is involved with chocolate. I also love Jake Ryan. (since I’m sharing my loves) This milkshake idea had been teasing me for days. I finally had had enough torture and decided to do this! I scoured the web for respectable milkshake recipes to no avail. then I said, “eff this! I’m a fat kid. I got this!” (i happened to have that convo with myself in the grocery store…in the ice cream aisle…it was, well, it was awkward. Espesh for the guy next to me.) So I winged it (the recipe that is) and it came out quite deelish! I have some notes under the recipe. Mostly, things i will try next time around. Because, yes, this will be making another appearance! In fact, i liked it so much, we have a date this Friday!

Peanut Butter-Banana-Chocolate Chip Milkshake

(This recipe was enough for 1 large and in charge shake. It filled up a pint glass.)

1 banana (peeled and sliced)

1.5 cups vanilla bean ice cream

1 tablespoon peanut butter ( i used creamy)

2 tablespoons chocolate chips ( i will use mini chips next time around!)

whip cream (for topping)

Place banana, ice cream and pb in blender. Blend until smooth. Add chocolate chips and blend until chips are chopped to your desired consistency.

Pour into glass(es)

Top with whipped cream.

Try not to let anyone see you licking your empty glass. Rinse. Repeat.


  • I had milk on hand just in case I needed it to thin out the shake. I didnt end up using it. Eyeball the consistency and add a tablespoon at a time until it reaches your preferred thickness.
  • Inititally I used WAY too many chocolate chips. Like, a whole glass bottom full of chocolate chips. If you use too much, they will sink to the bottom. This is no bueno. You want everyone at the party in the blender to, well, blend together. So, start with 2 tablespoons and add on from there.

Parmesan Chicken Bites, boiiiieeee!

Yo, it’s Mondays Morsels!!!! I wanted to make chicken soup. Because its cold. also, because I’m lazy, I didn’t want it to take too long. So, at 6:30, with my tummy rumbling, I realized I didn’t really have time for soup. I searched online for a quick chicken recipe and found one at Simply Recipes. I love this site and knew immediately this is what I would make!

Parmesan Chicken Recipe (via Simply Recipes)


1 clove garlic, minced
1 stick unsalted butter (1/2 cup or 1/4 pound), melted
1 cup dried bread crumbs
1/3 cup grated Parmesan cheese (or 2/3 cup if you are using a Microplane zester)
2 Tbsp chopped fresh parsley
1/4 teaspoon salt
1/4 teaspoon garlic salt
A large pinch of Italian seasoning (herb mix)
1/8 teaspoon ground black pepper
2 lbs of skinless, boneless, chicken meat, cut into pieces no larger than 2×2 inches

1 Preheat oven to 450°F.

2 In a bowl, combine the minced garlic with the melted butter. In another bowl mix together the bread crumbs, Parmesan, parsley, salt, garlic salt, Italian seasoning, and pepper. Dip chicken pieces into garlic butter, then into crumb mixture to coat.

3 Place coated chicken pieces on to a 9×13 baking dish. Try to leave a little room between each piece. Drizzle with remaining garlic butter and bake uncovered 15 minutes, or until chicken is cooked through and juices run clear. Note that the chicken will get much more browned on the bottom side than on the top.

Serves 4-6.

My Notes:

I used a pouch from Costco that had two chicken breasts. Since I don’t have a scale, or 4 to 6 hungry peeps around, I just cut up the two and went with it. Since I had less chicken, I used 1/2 stick of butter and 1/2 cup of bread crumbs. I detest parsley, so that was out! i used granulated garlic. Not because I didn’t have a garlic clove (because it was totally shaking its garlic head at me in utter disappointment the whole time!) but because I don’t have one of those cool garlic press’ or one of those cool garlic chopper thingys, so I went granulated. Don’t judge me!! I still stuck with the rest of the measurements because I didn’t want to skimp on the flavor, or the cheese!!!! I also left my chicken in for just a couple extra minutes. I have this weird thing about chicken and it not being cooked all the way through! So, you are probably good with the 15 minutes!

If you have not tried this sauce, drop whatever you are doing, go to Trader J’s and buy it! NOW! Now i say!! it will change the way you see marinara…FOREVA!!!! Seriously! I hate buying bottled sauce, but I am just too damn lazy to make my own. (My godmother makes her own and it is amazing. She’s fancy like that!) This sauce is so delicious and very nutritious (hehe, i rhymed!)

So, right after I popped the chicken in the oven, I threw some of this bad mama in a small saucepan and let it come to a boil! I added just a bit more garlic ( to ward off the vampires) and it was so perfect on top of those yummy chicken bites! This meal took less than 30 minutes from start to finish! Within an hour I had dinner made and was sitting in my chair, sippin on my Coke Zero with a happy belly! Life is good!

Monday’s Morsels

I’m pretty sure my Christmas present to myself was an extra 10lbs. Yay me! Because of that, and because instead of writing this post today, I was busy eating Broccoli Cheddar Soup from Panera whilst playing Words with Friends (that game is like heroin! If you havent tried it, DONT DO IT!) and watching Golden Girls (Damn that Sofia was such a sparkplug!) instead of showing you a recipe from something I made. I’m going to tell you about what I plan on making this month, and other food related shiz. Recipe Girl has this really amazing challenge that started on Saturday called the 10 in 10 Healthy Challenge It’s basically a bunch of awesome blogger chicks (and men probably) who are taking the challenge to be healthy for the first 10 weeks of this year.  Recipe Girl’s site is really awesome! And now, she’s got almost 300 peeps joining this challenge! All of whom are blogging and or tweeting about it! I am trying to get on board with this challenge. And, in trying, here are some recipes I plan on making this month:

This bowl ‘o heaven comes from The Pioneer Woman I’ve already confessed my love obsession for her, here. She makes livin on a ranch, cooler! Cuz, let’s be honest, livin on a ranch is pretty damn cool. I dont know how I’d ever make it, but she makes it look so glamorous! So, this is her, Simple, Hearty, White Chili. I dont even like “white” beans. But, this recipe made me want to eat some!
